What is the Bakery Industry?

The Canadian bakery industry involves the on-site manufacturing of baked products. There are two types of bakeries: retail and commercial. Retail bakeries (311811) manufacture a wide range of baked products. These include but are not limited to bagels, bread, cakes, croissants, doughnuts, and pastries. Products are purchased by retail customers who consume them off-site. Commercial bakeries (311814) manufacture a similar range of baked products. In addition, commercial bakeries also manufacturing frozen baked products. Products are sold to commercial customers for off-site consumption.

In addition to retail bakeries and commercial bakeries, this guide will also cover cookie manufacturing and baked goods stores. However, it should be noted that due to differences in production/manufacturing, cookies are classified under a separate industry code (311821). Baked goods stores also have their own industry code (445291). The reason is that although these stores sell bakery products, they do not manufacture them on-site.
